Schezwan Fried Rice

Schezwan Fried rice is made by tossing cooked rice / steamed rice with Schezwan sauce along with vegetables or chicken or sea food. It is a Indo - Chinese dish which is very easy to prepare and can be made in jiffy for the week day meal. It is full of flavours and spicy. You can toss your favourite vegetables / store bought left over chicken. You can just add scrambled eggs and it tastes delicious.



I made Chilli paneer to go along with Schezwan fried rice. Since I used a lot of vegetable in chilli paneer, I made this Schezwan rice plain. For making Schezwan fried rice, we need Schezwan sauce. I have posted recipe for homemade Schezwan sauce. You can use store bought Schezwan sauce.

Ingredients


  • 1 Cup Rice
  • 1 and 1/2 Cup water
  • 1/2 Teaspoon Sesame seed oil
  • 3 Tablespoon Schezwan Sauce

  • 1 Tablespoon Chopped spring onion greens
  • Salt to taste

Directions :


1. Wash rice twice and soak it in tap water for 15 minutes. In a pan, add rice, salt to taste, 1/2 Teaspoon oil and 1 and 1/2 Cups of water. Cook until it is almost done. Do not over cook rice
2. Using a fork, gently separate the rice and spread it on a plate to cool for 10 minutes
3. In a wok / pan, add 3 tablespoon Schezwan sauce and add the cooked rice
4. Gently toss together. Add chopped spring onion greens and serve hot with veggies or gravy
