Soya Chunks Coconut Gravy

Soya Chunks is rich in Protein and it is believed to have protein equivalent to meat. It is one of the best protein source for vegetarian lovers. I have a family member who does not eat meat and I make soya chunks gravy once in a while a side for chapathi / roti.



Ingredients

  • 1 Cup Soya Chunks
  • 1 Medium Sized Onion Chopped roughly
  • 1 Tomato Chopped
  • 1 Tablespoon + 1 and 1/2 Teaspoon Oil
  • 1/2 inch Long Ginger
  • 5 Garlic Cloves
  • 1 /2 Inch long cinnamon stick
  • 2 Cloves
  • 1/4 Teaspoon Fennel Seeds
  • 1/2 Teaspoon Cumin Seeds
  • 1 and 1/2 Teaspoon Coriander powder
  • 1 Teaspoon Red Chilli Powder
  • 1/4 Teaspoon Turmeric Powder
  • 1 Cup Coconut Milk

Directions :

1. In a large pot bring 3 Cups of water to boil. Add 1/4 Teaspoon Salt. Add Soya Chunks and let it boil for 5 minutes. Drain water completely in a colander and wash the soya chunks in running tape water for 2 minutes. Squeeze water completely from soya chunks

2. Grease a cookie sheet. Add 1 Teaspoon Oil , 2 pinches of salt to soya chunks and toss them gently. Spread soya chunks on the cookie sheet. Bake at 200 C for 5 minutes or until they turn crispy. Set aside

                    


3. In a pan , heat 1/2 teaspoon oil. When the oil is hot, add fennel seeds, cloves, cinnamon stick. Fry on lowest heat setting for a minute

               

              
                       

4. Add onion , ginger and garlic cloves and fry till onion is soft

5. Add tomatoes and cook until tomatoes are mushy and soft. Cool this mixture completely

6. Grind this mixture in spice jar to fine paste

                     

7. In the same pan, heat 1 tablespoon Oil. When the oil is hot, add cumin seeds. When they splutter, add the paste we prepared at step number 6

8. Fry for 2 minutes , oil will start leaving from the mixture

9. Add coriander powder, red chilli powder, turmeric powder and fry for 2 more minutes


                         


                          


10. Add 1 Cup coconut milk along with 1/2 cup water , salt to taste and bring it to boil

                          


11. Add soya chunks to this gravy and cook for 2 minutes more

12. Garnish with chopped cilantro leaves and serve hot with roti / chapathi
