Spinach Parmesan Rice

Have leftover rice from the night before ? Turn that into a delicious healthy meal with spinach and parmesan. A quick and easy meal that is ready in under 15 minutes. Caramelized onion and garlic gives nice flavor to the rice. Serve it hot with freshly grated parmesan cheese. 





  • 1 Cup Cooked rice / left over rice ( I used leftover basmati rice)
  • 1 Tablespoon Olive Oil
  • 1/2 Cup spinach packed / thaw if frozen
  • 2 Garlic Cloves
  • 1 Medium Onion chopped finely
  • a big pinch of nutmeg
  • 2 Tablespoon Parmesan cheese
  • Salt to taste
  • freshly ground black pepper to taste


1. In a pan, heat oil. When the oil is hot, add garlic cloves and fry for few seconds. Do not brown / burn garlic


2. Add onion and sprinkle a pinch of salt and fry / sauté the onions until they are nice golden and caramelized
3. Add spinach and sprinkle a teaspoon of water and let the spinach cook for 2 minutes


4. Add a pinch of nutmeg and give it a stir


5. Add cooked rice to the pan and mx everything together

6. Season with salt and freshly ground black pepper

7. Simmer for 2 minutes until the rice is warm enough to melt the cheese

8. Finally add parmesan cheese to the rice and give it a nice stir

9. Serve hot immediately
